The masses have spoken (well, a few comments on my Instagram, but that’ll do)!
I H A T E mornings.
Absolutely loathe them. I won’t speak to you until I’ve had coffee, and I’ll be tired no matter how much I sleep the night before. With that being said, breakfast is my getaway. If you follow my Instagram, you know I’m all about breakfast. Avocado toast, protein waffles, eggs, you name it, I love it.
Let’s face it: Açai bowls are trendy af.
And I love all things trendy. So this morning & made a delicious açai bowl for breakfast & finally nailed a recipe. Read below!
- One packet of frozen açai
- One frozen banana
- One cup of frozen berries
- One handful of spinach
- One tablespoon of peanut butter (or your favorite nut butter)
- One cup of non-dairy milk (I used unsweetened vanilla Oat milk)
- Fruit of choice (I used strawberries & banana)
- Chia seeds (P.S. ad whatever seeds you love!)
Freeze the berries overnight if you don’t already have them frozen. In a blender, add all your ingredients. I found it was a little hard to blend everything frozen, so maybe add a few non-frozen strawberries or an extra bit of milk. Once it’s blended, pour your puree into a bowl and top with your fruit, granola, seeds, and anything else you want! Kiwi and blueberries are great toppings, and so are cacao nibs and coconut flakes.
It was always hard for me to make the perfect bowl- it always ended up being more smoothie-esque. This recipe is destined for success, and I’ll definitely be making açai bowls more often! It was a great breakfast and it filled me up way past lunch time. Try it out & let me know how they turn out! You can always tag #eatwithme and #justnickithings so I can see your posts on Instagram.
Bowl-appetite! (I’m such a loser).
