
Happy Thursday! If you follow me on Instagram (which you should, if you don’t you suck. JK, but seriously follow me), you probably saw my yummy bowl I made for lunch.
Luckily, it’s extremely easy to make.
Ingredients:
- 1 chicken breast
- Handful of spinach
- Mushrooms
- Asparagus
- 1 egg
- 1/4 lemon
- Seasoning of choice
- Olive oil
Prep:
I began by seasoning my chicken breast with salt, pepper, and garlic powder. Sauté the chicken in a pan until it’s thoroughly cooked. Midway through, squeeze lemon onto it. While waiting for the chicken to cook, I placed a handful of spinach in a bowl and began cooking the mushrooms and asparagus. I bought a bag at Publix that only requires you to heat it up in the microwave #easy.
Once that was done (it took 4 minutes to warm up the ‘shrooms & asparagus), my chicken was also done. I served some of the mushroom and asparagus mix on top of the spinach, and added in the chicken. I cut my chicken into bite size pieces before cooking it to make my life easier. Fry an egg and top your bowl with it to finish it off!
You can use cooking spray or olive oil to make your egg & chicken- I use cooking spray. The olive oil is optional to dress your spinach with if you’d like.
